Discover the Flavours of the Himalayas at The Conservatory with Across’s Limited-Time Pop-Up

Bangalore, 4th August 2025: This August, The Conservatory, Bangalore will host Across, the Kala Ghoda-based restaurant known for its distinct approach to Himalayan cuisine. From 8th to 10th August, diners in Bangalore will have the opportunity to experience a thoughtfully curated culinary journey that brings mountain traditions to the modern table.

Founded by Chef Viraf Patel and Prakriti Lama, Across explores the rich and lesser-known culinary heritage of the Eastern Himalayas. Using traditional techniques, indigenous ingredients, and contemporary presentation, the menu offers a unique perspective on one of Asia’s most unexplored food cultures.

Across was named at The Conservatory during one of Chef Viraf and Prakriti’s first few pop-ups, representing their love for the unexplored and underrepresented cuisines of the Himalayas. The specially curated pop-up will feature dishes such as the Corn & Nettle Soup, infused with wild Himalayan chives; Buff Tartar, a delicate preparation of diced filet mignon with mustard oil and spring onions; the comforting Mustang Black Dal, inspired by Thakali cuisine; and Pork Trotters & Belly, slow-cooked in a robust tomato and burnt coriander seed broth.

The Conservatory, known for its focus on design, hospitality, and experiential dining, provides an ideal setting for this collaboration. The space’s intimate atmosphere and attention to detail complement Across’s narrative-driven and ingredient-focused philosophy.

This limited three-day experience invites guests to discover the depth, diversity, and craftsmanship of Himalayan cuisine presented with a modern sensibility and deep respect for regional traditions.
